- Melt 2 tablespoons butter in a skillet over medium-low heat and cook the sliced onion for 25–35 minutes, stirring occasionally, until deep golden-brown and sweet.
- Season the chicken breasts and grill or pan-cook for 6–7 minutes per side, until the internal temperature reaches 165°F. Rest for 5 minutes, then slice thinly.
- Shred the lettuce, dice the tomato, and crumble the feta while the chicken rests.
- Lay out each tortilla and layer chicken, caramelized onions, feta, lettuce, and tomato across the center. Fold in the sides and roll tightly.
- Melt 1 tablespoon butter in a griddle or skillet over medium heat. Cook the roll-ups seam-side down for 2–3 minutes per side, until golden-brown with light crisp spots.
- Let rest 1–2 minutes, then slice in half on a diagonal and serve warm with salsa.

Storage: Refrigerate assembled, cooked roll-ups in an airtight container for up to 3 days; reheat in a skillet to re-crisp the tortilla.
Freezing: Freeze the chicken and caramelized onions separately for up to 2 months; assemble with fresh lettuce and tomato after thawing.
